Emeritus Vineyards Hallberg Blanc Pinot Noir Blanc 2020

This wine was made by gently removing juice from our Pinot Noir grapes prior to any skin contact. This results in wine with lower alcohol, higher acid and virtually no color. The juice was fermented in a concrete tank and neutral barrels using native yeast and low temperatures. After fermentation the concrete lot was transferred to neutral puncheons and a few new barrels to provide textural richness. The barrels were then stirred periodically to build additional body in the lots that were allowed to finish malo-lactic fermentation. The result is super-aromatic and beautifully textural wine.
